I have done several social media posts on this amazing breakfast but after getting another request for the recipe today, I figured I would do an “official” blog post on this now famous quinoa parfait. It was thanks to fellow fashion lover and foodie Stephanie of Soie Agency that I had my first quinoa breakfast experience. I used to think that quinoa was only for lunch or supper but when you add cinnamon to it, the possibilities for a morning time meal are endless.

Amie’s blog is rife with delicious gluten free kitchen concoctions that make my sensitive tummy very happy. When I first did the recipe, I followed it step by step using all the ingredients listed but you can honestly mix in whatever you have in cupboard and fridge (I substituted blueberries for apples in the above pic) and just use the cinnamon quinoa as the base (I often omit the almond milk too and it tastes just fine).
