Happy Canada Day! It’s hot and humid today so perhaps not the ideal time to bake apple crisp (thank goodness for A/C) but I love this recipe so much I had to make it (plus I had some tired looking apples I needed to use ASAP. This vegan apple crisp recipe by Choosing Chia is so delicious and with some vegan ice cream (or yogurt) it’s HEAVEN.

If you’re more of a strawberry and rhubarb kinda gal, this is another favourite recipe I love making in the summer (bonus: it’s gluten free). I actually have rhubarb growing in my backyard (it just appeared one day!) so every summer when it’s ripe, I take great pleasure in picking it to whip up this much enjoyed dessert. 

And if ever you’re in the mood to try another twist on a healthy apple crisp recipe, I’ve tried and really liked is the one below from from an ex-colleague of mine (Mélanie Voyer from my LOULOU magazine days) that is a queen in the kitchen:

For the apples:

5 granny smith apples (I used whatever I had in the fridge)

1 tablespoon pure maple syrup (Canadian of course!)

3 tablespoons water

2 teaspoons cinnamon

For the crumble topping:

1 cup old-fashioned oats

1/2 cup almond flour

1/2 cup chopped almonds

3/4 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup melted coconut oil

1/4 cup pure maple syrup

Preheat oven to 350 degrees. Peel apples and dice into cubes of approximately equal size. In a large bowl, toss apples with maple syrup, water and cinnamon. Pour apples into baking dish (I sprayed the baking dish with coconut oil)

In the same (now empty) bowl, add oats, almond flour, cinnamon, salt, coconut oil and maple syrup. Stir crumble topping together and pour into baking dish on top of apples.

Bake at 350 degrees for 40 to 45 minutes until apples are soft, covering pan loosely with aluminum foil halfway through to prevent from over-browning.

I love making this recipe and then dividing it in a few portions to share with family and friends (share those calories… and the love!).
