Happy Canada Day! It’s hot and humid today so perhaps not the ideal time to bake apple crisp (thank goodness for A/C) but I love this recipe so much I had to make it (plus I had some tired looking apples I needed to use ASAP. This vegan apple crisp recipe by Choosing Chia is so delicious and with some vegan ice cream (or yogurt) it’s HEAVEN.

Another healthy apple crisp recipe I’ve tried and really liked is the one below from Mélanie Voyer. I think I’ll be making her chocolate avocado pudding next (it also has maple syrup to continue with our Canadian theme).

For the apples:

5 granny smith apples (I used whatever I had in the fridge)

1 tablespoon pure maple syrup (Canadian of course!)

3 tablespoons water

2 teaspoons cinnamon

For the crumble topping:

1 cup old-fashioned oats

1/2 cup almond flour

1/2 cup chopped almonds

3/4 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup melted coconut oil

1/4 cup pure maple syrup

Preheat oven to 350 degrees. Peel apples and dice into cubes of approximately equal size. In a large bowl, toss apples with maple syrup, water and cinnamon. Pour apples into baking dish (I sprayed the baking dish with coconut oil)

In the same (now empty) bowl, add oats, almond flour, cinnamon, salt, coconut oil and maple syrup. Stir crumble topping together and pour into baking dish on top of apples.

Bake at 350 degrees for 40 to 45 minutes until apples are soft, covering pan loosely with aluminum foil halfway through to prevent from over-browning.

I love making this recipe and then dividing it in a few portions to share with family and friends (share those calories!).
