I know describing muffins as “magical” might seem like a stretch but if you believe that, it’s because you haven’t tasted Gwyneth Paltrow’s sweet potato muffins. I love it when a treat is packed with goodness: not just from a taste point of view but from the ingredients as well. Sweet potatoes are an excellent source of vitamin A and very good source of vitamin C, B6 and potassium.
I made the recipe from Gwyneth’s It’s All Good cookbook which you can purchase here. But to make it easier for you, I did a quick search online and found it on the Hello Canada! website of all places. One of the reasons it tastes so amazing is the “5 spices” (includes cinnamon, cloves, anise, nutmeg) although to be honest, I could only find a “4 spices” mix at the grocery store but it sure did the trick. The result is a muffin that is naturally sweet but also has a hint of those fall/winter spices that just warm up the soul.
