Eating healthy can mean a variety of different things for different people. It’s a clear fact though that consuming less meat is definitely a step in the right direction and this process doesn’t not have to be a complicated one. Case in point: this tofu vermicelli bowl. I simply swapped the chicken for tofu and now have a meat free meal!

This technique doesn’t always work of course so it’s trial and error but when you have a recipe that incorporates tons of flavours like this one does with lemongrass, garlic and cilantro you can be pretty sure that the result will be delicious.
