When my blogger gal pal Chadi of Brunettes Have More Fun posted this marinated salmon with caramelized pineapple quinoa recipe, it reminded me that I absolutely wanted to share it with you on the Red Fairy Project. We cooked up this masterpiece for a casual lunch but it’s so pretty and yummy that it could very well be prepared for a nice supper when you want to wow special guests.

I love the fact that it’s a healthy recipe but it packs so much flavour that it feels decadent (thank you brown sugar and caramelized pineapple). I think it could be a good option if you are trying to get a certain someone to eat more fish (perhaps the meat-loving hubby or chicken nugget only children). Hope you enjoy! xx
