This crunchy asian ramen noodle salad is my go-to recipe when I am fresh out of ideas on what to make for a quick meal. I just love the taste, texture and colour (hello yellow mango and purple cabbage!). Plus, the edamame and almonds give me the protein I need and the asian dressing is beyond yummy.  The recipe is from Gimme Some Oven by Ali Ebright and I found it via Pinterest. Gotta love social media for allowing us to make great discoveries. I had never heard of Ali’s blog before but now it’s one of my favourites for recipe inspiration!
