It seems that every few days, I discover a new food blog that is full of great recipes and so inspiring. A few weeks ago, my friend Liz sent me a Pin of this delicious mango parfait from blog Fo Reals Life (how can you not love that name?!). I repinned it and this morning I am in the mood to spend some quality time in the kitchen so after making the tahini and almond butter cookies, I decided to make this parfait that can serve as a snack later today and tomorrow at work. The only changes I made to the recipe is to use Greek yogurt instead of the vegan yogurt and maple syrup instead of Stevia. I also had to add a bit of almond milk in the blender or the ingredients were too “thick” for my weakly machine to blend up properly. I really need to invest in a Vitamix considering the number of smoothies I make in a week…

Above is the photo from Morgan’s blog and below is my not so inspiring photo (hey, you can’t always create a masterpiece). Because I added almond milk in the blender mix, the consistency was not thick enough for the oats to rest on top of it in the jar. Reason more to get a proper blender one of these days.
